Grilled Cheese with Pears and Tomato Soup
Grilled cheese and tomato soup is a classic meal to have on a cold day, or on any day when a craving arises. We decided to add a little twist to our grilled cheese with the addition of pear slices in the middle. The fried pears have a buttery and sweet flavor, which taste great with the warm, melted cheese and toasted, crunchy bread.
Marinated Roasted Veggie Subs
A warm and appetizing toasted roll with refreshing, cool, marinated, flavorful, and crisp vegetables. Optionally add some of the vegetables on the side of the sub or with a salad, which tastes great. The garden herbed vinaigrette marinates the vegetables wonderfully, and enhances the flavors excellently. The vegetables are light, and won't leave you feeling overly stuffed after eating.
Rosemary and Olive Oil Veggies and Rice
We love roasted vegetables and adding different herbs to the vegetables to try a variety of flavor combinations. The vegetables smell wonderful while baking, and are a nice addition to the rice. The rosemary is an aromatic herb that has a fragrant and pleasant scent, with hints of pine, lemon, lavender, mint and more, which pairs well with the olive oil.
Toast with Cream Cheese, Mandarin Oranges, and Cranberry Sauce
This meal can be an option for using leftover cranberry sauce. It is a very colorful dish. It has Fall flavors, feelings, and colors, and Christmas colors with the dark red cranberry sauce, and bright orange color of the mandarin oranges. The mixture of the cream cheese with the flavors of the cranberry sauce and cream cheese is so scrumptious.
Tomato Mozzarella Pesto Salad
This is so light and refreshing, and the flavors compliment each other well. This dish can be eaten as an appetizer, snack, side, for lunch, or dinner. It is similar to a caprese salad. We used pesto instead of basil leaves, and added balsamic vinegar, which pairs well with the other flavors. It is quick, easy, flavorful, and crowd pleasing.
Tuna Pita Melt
This meal hits the spot, and is deliciously satisfying. It brings a little variation to a "typical" tuna melt. The warm, toasted pita, melted cheese, hints of dill, pepper, lemon, garlic, and combination of the other ingredients makes this dish so tasty. The crunchiness of the shallot and celery is a nice addition to this meal. The leftovers are just as scrumptious.
Lemon Pesto Pasta with Asparagus
We love trying recipes with different types of pasta. This meal uses "bowtie" pasta, and brings out pops of flavor with the pesto, lemon, and balsamic vinegar. The balsamic vinegar is optional, if you don't like balsamic vinegar, but is highly recommended because it mixes so well, and tastes great with the pasta and asparagus. Optionally add your favorite toppings to the pasta.
Corned Beef, Roasted Red Peppers, and Aioli Toast Crackers
These beefy bite-sized snacks are super tasty and very flavorful. It will be hard to eat just one. Great for a party as an appetizer, or to eat on the side with a meal, or as a snack. The garlic aioli tastes delicious with the corned beef and roasted red peppers. The crunchy toast crackers taste great with the other ingredients. Enjoy them cold or warm.
Eggnog Hot Chocolate
If you love sweets, this drink is for you. It is a super sweet treat that is thick and very chocolatey, and an idea for using that extra eggnog. This drink has hints of flavor that taste like a brownie. Decadent and rich may also help to describe this hot chocolate. Optionally try with a squirt or dollop of whipped cream on top.
Chickpea Rice Salad
A flavorful blend of garlic, basil, and grapes. The arugula also provides a little peppery flavor to this meal, but it is not overpowering. The mixture of the pesto with the chickpeas tastes great. This meal will leave you feeling healthy, satisfied, and full, but not overstuffed. It provides a nice dose of fiber.
