This may be a good option if you like egg salad sandwiches, but don't want eggs, or to try something a little different. Chickpeas can help to aid in digestion and provide a plant-based protein. They also provide other health benefits, such as fiber, calcium, iron, folate, phosphorus, and manganese. The vegetables in this dish provide additional nutrients, such as antioxidants to support the immune system and vitamin c. The vinegar is not overpowering. It provides a little tang to this meal, and pairs nicely with the other flavors. This is a refreshing and light meal, which will not make you feel uncomfortably full. Disclaimer: The serving size may vary a little, depending on the type of bread you use. We used bagels, but a different type of bread may be used instead, if preferred.

The spinach helps to provide more nutrition to this dish, such as calcium, magnesium, potassium, vitamin A, folate, and iron. Optionally use pita bread instead of toast. This can also be enjoyed as a "closed sandwich" with two pieces of bread.
