Ingredients
This is so light and refreshing, and the flavors compliment each other well. This dish can be eaten as an appetizer, snack, side, for lunch, or dinner. It is similar to a caprese salad. We used pesto instead of basil leaves, and added balsamic vinegar, which pairs well with the other flavors. It is quick, easy, flavorful, and crowd pleasing.
Directions
Slice each tomato into 4 slices and add the slices to a plate.
Cut each slice of cheese into half. Add the halves on top of the tomato slices.
- We used BelGioioso Fresh Sliced Mozzarella (Gluten Free. Free of Antibiotics and RBST. Vegetarian).
Add the pesto on top of the tomato slices.
- We used Classico Traditional Basil Pesto Sauce and Spread (Gluten Free).
Then drizzle the olive oil on top.
- We used Filippo Berio Organic Extra Virgin Olive Oil (USDA Organic).
Drizzle the balsamic vinegar on top of the olive oil, and then top with ground peppercorns or pepper to taste.
- We used Nature's Promise Organic Balsamic Vinegar of Modena (USDA Organic).
- We also used McCormick Peppercorn Medley Grinder (Non GMO), which contains a mixture of black peppercorns, coriander, pink peppercorns, white peppercorns, allspice, and green peppercorns.
