This may be a good option if you like egg salad sandwiches, but don't want eggs, or to try something a little different. Chickpeas can help to aid in digestion and provide a plant-based protein. They also provide other health benefits, such as fiber, calcium, iron, folate, phosphorus, and manganese. The vegetables in this dish provide additional nutrients, such as antioxidants to support the immune system and vitamin c. The vinegar is not overpowering. It provides a little tang to this meal, and pairs nicely with the other flavors. This is a refreshing and light meal, which will not make you feel uncomfortably full. Disclaimer: The serving size may vary a little, depending on the type of bread you use. We used bagels, but a different type of bread may be used instead, if preferred.

Cheesy chicken and salsa, yum, yum! The crunch from the toasted bread is a nice addition to the other ingredients in this meal. The spinach helps to provide more nutrition to this dish, such as calcium, magnesium, potassium, vitamin A, folate, and iron. Optionally use pita bread instead of toast. This can also be enjoyed as a "closed sandwich" with two pieces of bread.
Olive and Cheese Toast

A quick, toasty and cheesy snack, with hints of salt and tang from the olives. The olives and cheese blend well together and provide a nice flavoring. We used a broiler to toast our bread. A toaster oven or skillet may be used instead, or a toaster to toast the bread, and then place the toast into a microwave to melt the cheese.
Flatbread with Cream Cheese, Mixed Greens, and Grapes

The creaminess and flavor of the cream cheese tastes so delicious with the flavors of the warmed flatbread, and other ingredients. This meal is an excellent option to eat at any time of the day. It is satiating, satisfying, and filling, but will not make you feel uncomfortably stuffed. Optionally substitute the baby spinach and spring mix with arugula.

A helpful way to eat eggs on the go. The eggs fit nicely into the pita pockets, and can be enjoyed with a variety of your favorite toppings and sides, such as salsa. The pita pockets may also be a great way to help get kids involved in preparing this meal by having them assist in stuffing the pita pockets.
