Chickpea Salad Sandwich

This may be a good option if you like egg salad sandwiches, but don't want eggs, or to try something a little different. Chickpeas can help to aid in digestion and provide a plant-based protein. They also provide other health benefits, such as fiber, calcium, iron, folate, phosphorus, and manganese. The vegetables in this dish provide additional nutrients, such as antioxidants to support the immune system and vitamin c. The vinegar is not overpowering. It provides a little tang to this meal, and pairs nicely with the other flavors. This is a refreshing and light meal, which will not make you feel uncomfortably full. Disclaimer: The serving size may vary a little, depending on the type of bread you use. We used bagels, but a different type of bread may be used instead, if preferred.

Drain the liquid from the can of chickpeas and then add the chickpeas to a large mixing bowl.

  • We used one 29 oz can of Goya Chick Peas Garbanzos Prime Premium (Gluten Free).

Slice the cherry tomatoes in half, and add them to the mixing bowl with the chickpeas.

  • We used one 10 oz container of NatureSweet Cherubs Heavenly Salad Tomatoes.

Chop the celery into small pieces and add them to the mixing bowl. We used 5 stalks.

Add the arugula to the mixing bowl.

  • We used about 2 handfuls of Nature's Promise Organic Baby Arugula from the 5 oz container (USDA Organic. No GMO Ingredients. No Prohibited Synthetic Ingredients. No Prohibited Chemical Pesticides)

Add the mayonnaise, mustard, ground peppercorns or pepper, dill weed, and vinegar to the mixing bowl. The ground peppercorns or pepper and dill weed can be added to taste.

  • We used 1/4 cup of Giant's brand of Real Mayonnaise made with Cage Free Eggs, 1 tbsp of Giant's brand of Stone Ground Mustard (Gluten Free), and 1 tbsp of Giant's brand of Distilled White Vinegar.
  • We also used McCormick Peppercorn Medley Grinder (Non GMO), which contains a mixture of black peppercorns, coriander, pink peppercorns, white peppercorns, allspice, and green peppercorns, and McCormick Gourmet Organic Dill Weed (USDA Organic. Non GMO Project Verified).

Mix all ingredients together.

Toast the bagels and add a scoop of the chickpea salad to each bagel to desired amount. Optionally use a different bagel flavor or bread instead. This may also be enjoyed on non-toasted bread.

  • We used the 6 count of Thomas' Plain Pre-Sliced Bagels (No Artificial Sweeteners. No Cholesterol/A Cholesterol Free Food. 0g Trans Fat. No High Fructose Corn Syrup).
