Ingredients
A creamy, hearty dish, with a side of veggies. These little potato dumplings have a texture that is similar to little potato ball clouds. This is a simple dish, and the gnocchi cooks quickly. Enjoy with a side salad or a different vegetable of your choice.
Directions
Fill a large pot with water and bring to a boil. While the water is heating, add a bed of spring mix to a bowl.
- We used Nature’s Promise Organic Spring Mix 16 wt oz container (No GMO Ingredients. No Prohibited Synthetic Ingredients. No Prohibited Chemical Pesticides).
Chop the celery, carrots, and cucumber into small pieces. Add them to the spring mix along with the grape tomatoes.
- We used about 2 cups of Nature’s Promise Organic Baby Cut Carrots 16 wt oz bag (USDA Organic. Excellent Source of Vitamin A. No GMOs. No Prohibited Synthetic Ingredients. No Prohibited Chemical Pesticides).
Once the water comes to a boil, add the gnocchi and stir occasionally.
- We used two 16 wt oz boxes of Delallo Potato Gnocchi.
Pour the entire jar of alfredo sauce in a large mixing bowl.
- We used one 15 wt oz jar of Newman’s Own Alfredo Pasta Sauce (Gluten Free).
After 3—4 minutes, the gnocchi will gradually float to the top.
Scoop out the gnocchi as it floats to the top, drain the water from each scoop, and add the gnocchi to the mixing bowl of alfredo sauce.
Stir the gnocchi and alfredo sauce together.
Plate the gnocchi and top the salad with dressing. Optionally, add your favorite veggies to the salad or eat the gnocchi with a different vegetable of your choice, on the side. As an additional option, sprinkle pepper on top of the gnocchi for some spice. We both loved the flavor of the pepper mixed with the alfredo sauce.
- We used Newman’s Own Ranch 16 fl oz bottle (No Artificial Flavors. Soybean Oil Free. No Colors from an Artificial Source. No MSG).
- We also used McCormick’s Peppercorn Medley 0.85 wt oz jar (Non GMO), which has a mixture of black peppercorns, coriander, pink peppercorns, white peppercorns, allspice, and green peppercorns.
