Ingredients
This is more of a filling salad with the addition of the tortellini. It is a great way to add a little something extra to your salad. This is a very quick meal. The tortellini cooks fast. The warm and tender tortellini provides a nice temperature and texture contrast to the cool and crisp salad. It is very satisfying.
Directions
Fill a large pot with water, and bring to a boil. Add the frozen tortellini to the pot, and heat for 3-5 minutes, until tender. Stir occasionally.
- We used 2 frozen 14 wt oz bags of Seviroli Cheese Tortellini, which is filled with premium Ricotta, Romano, Parmesan, and Asiago cheeses.
Once the tortellini cooks, drain the water, and add the tortellini on top of the salad(s). We used two different salad bags for this meal, but it can be enjoyed with any salad toppings and lettuce of your choice.

- Green onion
- Crispy corn

- Iceberg lettuce
- Carrots
- Red cabbage
Top the tortellini and salad(s) with a salad dressing of your choice. Kent topped his tortellini and salad with the Avocado Ranch dressing that came with his salad. Amy topped her salad with Wish-Bone Garden Herb Vinaigrette Dressing made with Avocado Oil.
