Two-Layer Chicken Nachos

These can be eaten for lunch, dinner, as an appetizer, or snack. The chicken is tender, and the nachos are crunchy, cheesy, filling, and delicious. Enjoy these tasty nachos at a party or gathering, such as during game day. We decided to eat these for Christmas dinner to have something a little different. Enjoy with your favorite toppings. The sizzling of the nachos will make your ears happy, and the flavors will make your tastebuds dance.

Preheat the oven to 425 degrees Fahrenheit. Place the uncooked chicken breasts onto a baking sheet. We used an aluminum foil covered baking sheet.

Place the baking sheet into the oven to bake for 20 minutes.

  • We used Nature’s Promise All Natural Chicken Breast Boneless and Skinless Fillets (Non GMO Verified. 99% Fat Free. No Artificial Ingredients. All Vegetarian Diet. Fed a Grain, Vitamin and Mineral Diet. No Antibiotics Ever).

Place a layer of the tortilla chips onto a second baking sheet. We also covered our second baking sheet with aluminum foil.

  • We used the 13 wt oz bag of Tostitos Lightly Salted Original Restaurant Style Tortilla Chips (50% Less Sodium. No Artificial Flavors. No Preservatives. No MSG).

Once the chicken breasts bake, remove from the oven, and let them rest for 5 minutes. Then slice the chicken breasts into strips and add to a small mixing bowl. Keep the oven on 425 degrees Fahrenheit once the chicken is removed because the tortilla chips will be going into the oven.

Add the olive oil to the mixing bowl, then 1/2 to 3/4 of the taco seasoning packet. Mix together with the chicken.

  • We used Filippo Berio Organic Extra Virgin Olive Oil (USDA Organic).
  • We also used Old El Paso Taco Seasoning Mix with 25% Less Sodium.

Add 1/2 of the chicken strips from the mixing bowl on top of the layer of tortilla chips. Then add a layer of cheese and a layer of the lettuce on top. Then sprinkle more of the taco seasoning on top of that layer.

Repeat with a 2nd layer of tortilla chips, chicken strips, cheese, lettuce, and taco seasoning on top.

  • We used Sargento Reduced Fat Off the Block 4 Cheese Mexican Traditional Cut Shredded Cheese, which contains a mixture of shredded reduced fat monterey jack, asadero, cheddar, and queso quesadilla natural cheeses (No Added Growth Hormones. No Artificial Flavors. No Antibiotics).
  • We also used Dole’s Shredded Iceberg Lettuce.

Place the layered chicken nachos into the oven to bake for 10 minutes.

Once the nachos bake, top with the salsa, sour cream, and guacamole to taste.

  • We used the 16 wt oz jar of  Pace Mild Chunky Salsa (Gluten Free), Breakstone’s All Natural Sour Cream, and Calavo Guacamole with a medium spice level (All Natural. No Trans Fat. No Preservatives. Gluten Free. Natural Source of Dietary Fiber, Vitamin K, and Folic Acid).
