Ingredients
A light and refreshing salad. This salad can be eaten as a meal, or it can be included on the side with a different dish. It does not include a lot of ingredients, but will leave you feeling satisfied and satiated. It is quick and easy.
Directions
Place the spinach leaves into a large mixing bowl.
- We used Nature’s Promise Organic Baby Spinach leaves 16 wt oz container (No GMO Ingredients. No Prohibited Synthetic Ingredients. No Prohibited Chemical Pesticides).
Add the walnuts to the mixing bowl.
- We used Kirkland’s Signature Walnuts from Costco.
Next, add the blue cheese.
- We used Boar’s Head All Natural Creamy Blue Cheese Crumbles (Gluten Free. Good Source of Calcium and Protein. Milk from Cows Not Treated with rBST. Suitable for a Vegetarian Diet).
Drain the juice from the cans of beets and then add the beets to the mixing bowl.
- We used Giant’s brand of No Salt Added Sliced Beets.
Then add the olive oil, balsamic vinegar, and pepper.
- We used Filippo Berio’s Organic Extra Virgin Olive Oil (USDA Organic) 16.9 fl oz bottle.
- We also used Nature’s Promise Organic Balsamic Vinegar of Modena (USDA Organic. 6% Acidity), and McCormick’s Peppercorn Medley Grinder 0.85 wt oz jar (Non GMO), which contains black peppercorns, coriander, pink peppercorns, white peppercorns, allspice, and green peppercorns.
Mix all of the ingredients together, serve, and enjoy!
