Ingredients
This is a healthy, tropical, and flavorful dish. The rice and coconut milk smell amazing while boiling together. The pineapple pairs so well with the flavors of the coconut milk and rice. Enjoy with your favorite vegetable on the side for an additional helping of nutrition.
Directions
Add 2 cups of water, 1 cup of coconut milk, 1 cup of pineapple juice from the cans of pineapples, and 3 cups of rice to a medium-sized pot. Cook on high for 20 minutes or until all liquid is absorbed. Stir occasionally.
- We used Nature’s Promise Organic Unsweetened Coconut Milk (USDA Organic. Dairy Free. Vegan). We also used Giant’s brand of Pineapple Chunks in Pineapple Juice, and Mahatma Extra Long Enriched Rice (Non-GMO Verified. Certified Gluten Free).
Add the frozen broccoli into a large pot and cover with water.
- We used 1 frozen 16 wt oz bag of Nature’s Promise Organic Broccoli Florets (USDA Organic. Excellent Source of Vitamin C).
Cook the broccoli on high until warm or for 10 minutes. It may not come to a boil, but it is hot enough to make the broccoli warm without making it mushy. If the broccoli cooks too long it will become very soft. Drain once cooked.
After 20 minutes the rice should be cooked.
Add the pineapple chunks to the rice once the rice is cooked. We used two 20 wt oz cans of the pineapple chunks.
Optionally, add curry to the rice. Additional coconut milk can be added if you prefer to have a soup consistency with the rice and pineapple.
