Ingredients
A refreshing, juicy, nutritious side dish. This dish can be eaten at any time of the day, and/or with different meals. It requires no cook time. The refreshing watermelon is so hydrating. With the addition of the balsamic vinegar, mint, and feta, it is sure to be lip-smacking. We used freeze dried mint.
Directions
Cut the watermelon into chunks, and place the chunks into a small to medium-sized bowl.

Drizzle balsamic vinegar onto the watermelon chunks.
- We used Nature’s Promise Organic Balsamic Vinegar (USDA Organic).

Add 2 tbsp of feta, or more to taste. Optionally, try it with goat cheese to give a creamier flavor.
- We used President Feta Crumbles.

Sprinkle about 1 tsp of freeze dried mint on top. Optionally, use fresh mint.
- We used Little House Freeze Dried Mint (Non-GMO Verified).
